Summer Storms and Highlights

While my sister and brother-in-law are probably drenched from being at the U2 concert at an outdoor stadium, I am comfortable in their guest room listening for Keira and/or Grace in case they are disturbed by the crazy rain, thunder and lightning. It's the perfect night to be blogging! It's been nice to have the time to just sit and look at all the photos and videos I've taken in the past couple of months. I've selected some to share...

Here's Keira showing off her best dance moves

Keira received this awesome vehicle from Grandpa P and loves going for a spin

Enjoying her new ride

Yummy Teriyaki Wings

As many of you know, I love food. Wings are a part of the foods I love. A wonderful friend of mine shared this delicious marinade with me for chicken wings and now I'm paying it forward to those of you who enjoy wings as much as I do. And, you know that if I can do it, so can you!! It's really easy and really yummy. Enjoy!!

Ingredients:
3-4 lbs chicken wings

Marinade:
3/4 cup sugar
1 cup water
1 cup soy sauce (I mixed regular and low sodium)
1/4 cup orange juice (or pineapple juice if you prefer)
1/4 cup vegetable oil
2 tsp ginger (less or more depending on your ginger preference)
2 Tbsp honey

Directions:
  • Combine ingredients above for the marinade (stir well to dissolve honey and sugar).
  • Add chicken wings. Refrigerate overnight.
  • I grilled the wings on medium heat and they turned out wonderfully. I like that slightly charred taste when grilling meat.
  • Or, you can bake at 350-375 degrees on a cookie sheet or baking dish spooning sauce on top. Bake for 45 minutes or so, turning them over every 15 minutes.
  • Warning: The sauce will get thick & sticky and may burn slightly, so you might want to line with foil or count on doing some super scrubbing.
Enjoy!!

Keira as a 4-year old

We celebrated Keira's birthday, not once, but twice! Four is a big deal, especially when hearing about it from Keira for months leading up to the big day. She is a little girl with a very big personality. I'm pretty sure she's becoming more and more adorable with every passing day. Happy 4th Birthday (a little late) to my little sweetheart.

Enjoying birthday cupcakes - frosting, anyway

We can't believe our little girl is 4!
